The farm grows the Bourbon variety surrounded by natural fruit trees for shade. The coffee is pulped immediately after harvest and fermented for about 24 hours in wooden tanks, before being dried on patios. Romeo also makes his own organic compost from the spent coffee pulp to feed his farm. Because of the extreme elevation, Romeo and his family have to carry their coffee 30 minutes down to the nearest part of the dirt road for it to be transported by truck to the nearest collection center. Between his extra efforts toward regenerative agriculture and the remote nature of his farm, producing coffee from La Joya is not simple and is a labor of love. We believe the extra effort is well worth it and we're excited to share Romeo's coff
