The clouded forest there creates a cool microclimate with temperatures ranging from 50-60 degrees Fahrenheit. Because of the cooler temps, the drying process is even and slow with natural-processed coffees taking 25-30 days to dry on raised beds. The cherries are also floated prior to drying, which allows for an additional level of sorting and removal of defects. The attention to detail in the processing leads to incredibly clean naturals with focused, expressive, and vibrant flavors that showcase highlights of both the processing and the variety.
