Sentidos Ancho Agave Spirit 750ml - In the Spring of 2021, members of a small, relatively new cooperative in the village of Xochipala, Guerrero, collaborated to distill one of their first collective batches. The spirit is made using wild agave "Ancho" (a. Cupreata) harvested from the region, which is slow-roasted for five days with vapor in an above-ground brick oven. After milling and fermenting the resulting mash for six days with spring water, the spirit is double-distilled in two 300-liter copper alembic stills. The 800-liter batch was then proofed into four separate 200-liter blends using heads, hearts, and tails, and the 188-liter blend was bottled for export by Cinco Sentidos in June 2022. This Ancho Agave Spirit is part of La Colección Guerrero, a curated exploration of small-batch "destilados" crafted by a selection of Guerrero's most revered "fabriqueros."
