Agua del Sol is a brand that aims to bring traditional agave spirits back to rural communities by selling them locally in larger containers of five and ten liters. They avoid the costly certification process required by the CRM for "mezcal," making the spirits more affordable and accessible. The brand collaborates with multiple mezcaleros, including Mtro. Francisco Garcia Leon, who is the master distiller for their Mexicano (Agave Rhodacantha) batch. This particular batch was produced in San Guillermo Miahuatlan, Oaxaca, in May 2020, with a production volume of 600 liters and an ABV of 49%. The agave was milled using a traditional bull-drawn tahona mill, and the fermentation took place in Sabino wood vats. The distillation process involved twice distilling the spirit in copper alembic stills with a "refrescadera" or reflux still. The cuts were adjusted using distilled well water.
