Hachiya Persimmon is the most misunderstood of persimmons.  This luscious, tear-dropped shaped fruit is often maligned for a supposed "astringent" taste, but Hachiya Persimmon CAN NOT be eaten while still hard. Wait for Hachiya to become fully soft, and then enjoy one of sweetest, richest fruit puddings ever made by a tree. Hachiya persimmon is also air-dried by special technique to become the revered Hoshigaki persimmon. This easy to grow tree produces fruit very reliably in Southern California and has almost no significant pests or diseases to worry about. Hachiya Persimmon trees can grow to be very tall, but size can be maintained through pruning. Harvest fruit only once the leaves have dropped from the tree.
