Potato onions grow like garlic bulbs; there are multiple onions that grow like cloves to one plant clump. Harvesting: When the onion tops fall over, remove the mulch and stop watering for two weeks. Once about half the tops fall over, the onions are ready to harvest. They can be harvested during mid summer throughout winter. You can harvest the whole cluster or take only a few for immediate use. Be sure to harvest on a dry day.  Curing: To cure the onions, store the bulbs in a shaded, dry warm space with good air circulation. Spread them out in a single layer and allow them to cure for 1 to 2 months. Remove any spoiled bulbs throughout the curing process. After curing, cut the tops off, leaving about 1 inch above the bulb and separate the onion clusters.
