A delicious weeknight meatless Monday solution that will be on your table in less than 30 minutes. Serves 6-8 generously. Can also add ground meat if you would like.You will need:8 Oz Fresh or canned mushrooms (drained)4 cups of Chicken Stock½ C shredded mozzarella cheeseOptional:1 pound ground beef, browned and drainedDirections:1. In a 12” skillet combine Skillet mix with mushrooms and 4 Cups chicken stock. Bring to a boil and reduce and simmer for 15-20 minutes. Stir often to prevent sticking.2. When noodles are cooked through to your desired consistency, turn heat off and sprinkle on ½ cup of mozzarella cheese.3. Cover and let rest for 5 minutes prior to serving. Serve with a green salad to make a complete meal.If using the optional meat, add in step one.
