The tri-tip is a triangular cut of beef that comes from the bottom sirloin of the hindquarter. Tri-Tips are generally tougher cuts of meat and are meant to be slow cooked on a smoker. Tri Tips are cut to the general thickness and are cut 3-4 lbs per package.
