Pullulan is a water-soluble polysaccharide produced by the fermentation of starch by the fungus Aureobasidium pullulans. It is composed of repeating units of maltotriose (a trisaccharide made up of three glucose units) linked by α-1,6 glycosidic bonds, with occasional branching via α-1,4 linkages. Pullulan can form a clear, transparent film and exhibits excellent film-forming properties. It is commonly used as a thickener and film-forming agent in various industrial applications.
