The profile we are aiming for is fruit forward, rich, and clean. Coffees like this are what initiated many of us into the world of specialty coffee. We work with Catalyst recently turned Zem Coffee to select carefully picked lots from washing stations and coffee collectives throughout the Guji and Sidama regions of Ethiopia. We rotate in fresh harvests year round that match that classic blueberry/fruit-forward profile that so many of us first experienced in Ethiopian coffees.
