From the moment we open the bag we’re struck with a perfumey bouquet that carries through into the cup. The first sip sings with bright Meyer lemon notes that drift into jasmine blossoms. As the cup cools the sweetness opens up into raspberry custard. The cup finishes with a delicate, lingering echo of vanilla bean and caramel. Pablo Ponce owns a 5-hectare coffee farm named Perla Chiquita outside the town of La Perla. This lot is exclusively made up of the Sidra variety, which was developed in Ecuador and has a history shrouded in mystery and rumors.
