Lavender Jelly
Most of our flavors come from repeated customer requests—but every now and then, one voice stands out. A few craft fairs ago, a young lady asked for a lavender jelly, and the idea stuck with us—evoking images of tea service, scones, and lazy afternoons. So we tracked down some beautiful, food-grade dried lavender and got to work. The result is a bold, fragrant jelly with a true lavender punch and a soft floral texture from the buds left in. A subtle citrus note helps round things out, keeping it bright and balanced without overwhelming the palate. We steep the dried lavender gently, then blend it with pure cane sugar and a touch of citrus pectin to help it set. This jelly is a dream with clotted cream on a warm scone, stirred into tea, or served alongside goat cheese for a floral twist.
