Mont St. Francis was named for a nearby Franciscan retreat and was first made in 1994 in the likeness of the rustic, stinky trappist cheeses originating from monasteries across Europe. Traditionally washed in brine or beer, Monnik Beer Company’s His Dark Materials stout emparts a funky, pungent flavor with a sweet, smoky finish. Pairing Suggestions: Delaware Fireball, Batali Pickled Onions, Spent Grain Crackers by 4 Birds Bakery Each 1/2 wheel is approximately 8oz. Keep refrigerated. Ingredients: pasteurized goat milk, beer, culture, animal rennet, salt, B. linens May contain wheat.
