So What? "Château de Vaux is located in a tiny AOC called Moselle, just over the Vosge mountains from Alsace near the border with Luxembourg (this is France's most northerly appellation). In September of 1999, Marie-Geneviève and Norbert Molozay purchased the Château de Vaux and consolidated their vineyards, restored the cellar and improved farming and winemaking techniques. As a result of their hard work, Marie-Geneviève and Norbert brought the Moselle wine producing region back to life. The estate has been certified organic since 2014 and all the wines are vegan. Les Hautes-Bassières is a single vineyard wine made from 100% Pinot Noir. The grapes are put into vats after destemming and left for an extended maceration of three weeks. The wines are aged in a mix of barrels of varying origins, ages and toasting. The wine is matured in casks for 12 months. Blending and bottling is done at the Château at the end of September.
