2022 Benanti Etna Rosato, Sicily

The star of this wine is Nerello Mascalese, Etna's noble red grape, grown in the volcanic, mineral-rich soils that lend an unmistakable character to the wine. Harvested by hand in early October, the grapes are carefully de-stemmed and subjected to a pre-fermentative cold maceration for 12 hours. They are then softly pressed, yielding 65% of the free-run juice. The fermentation process carried out in stainless steel vats at controlled temperatures, lasts 10 days. This process is facilitated by Benanti's own indigenous yeast, a product of years of diligent research and experimentation. The wine matures on fine lees and then refines in the bottle for 2-3 months, enhancing its complexity and depth.
