Sea Scallops - Sushi-Grade/Dry Packed (10/20s)
Our scallops are being harvested out of George's Bank. George's Bank separates the Gulf of Maine from the Atlantic Ocean. The scallops coming out of this area are of premium quality. Our sea scallops are "dry-packed," meaning they have never been treated with preservatives. Many scallops on the market are soaked in a phosphate solution to help preserve them longer. This solution burns off when heat is applied during cooking. You may have noticed a milky-like foam coming off of the scallops in your pan in the past. This is naturally unpleasant and makes searing the scallops more difficult. You will not experience this with our dry-packed sea scallops. You can order these in one lb increments, perfect for dinner for two. To avoid the need for preservatives, these scallops were flash-frozen at sea immediately after being shucked on the boat by the fishermen.
