It’s grown in Chiapas near the southern border, in the historic cacao cultivation town of Soconusco. The seeds are taken to the nearby state of Oaxaca, where they’re toasted and peeled by Zapotec women in a small village east of Oaxaca City. It is named after the Zapotec archaeological site near where it’s prepared. Profile: Savory, buttery blend of 5-day fermented and “washed” (unfermented) cacao.
