Jerusalem Artichoke (Helianthus tubersosus), also known as Sunchoke, is a plant with keen survival instincts. Above the ground, Jerusalem Artichoke boasts beautiful towering, classic sunflower look-alikes. Below the earth, however, the plant reveals large edible and nutritious tubers!
