Nopales Cactus (Opuntia matudae)

Nopal is an fruiting cactus plant cultivated for it's edible pads.  The cactus pads are a common ingredient in numeous Mexican dishes.  They are used like a veggie and have a flavor similar to asparagus and green beans.  Nopal is a common name in Spanish for Opuntia cacti, as well as for its pads. There are approximately one hundred and fourteen known species native to the semi-arid areas of the Americas.  It's grown abundantly in Mexico, as well as the Mediterranean and other semi-arid to sub-topical regions.
