The Las Lajas micromill in the Central Valley region is cited as one of the most significant innovators in Costa Rican coffee and beyond. In 2005, Oscar and Francisca Chacón decided to open their own micromill. After two generations of selling their harvested cherries to a cooperative for market price, starting their own milling operation came with an intimidating learning curve. The Chacóns took to this challenge with a diligent, systematic approach, and it didn’t take long before they were producing some of the most distinctive coffees anywhere. Their drive to constantly improve their coffee has led them to develop eight honey and natural processing methods, each with its own unique drying technique to highlight the distinct qualities of the coffee grown on their farms. This particular lot comes from their Los Ángeles farm and is naturally processed using their Perla Negra process, which takes about 22-30 days.
