We’ve crafted it specifically to evoke memories of scouring the house for presents before they are wrapped or sneaking fresh-baked cookies from the kitchen. The secret to the intense deliciousness in this blend lies in the advanced processing of these coffees. The producers behind these coffees are seasoned pros at fermentation experimentation, and two of these coffees are the fruits (and spices) of their labor. The backbone of this blend is a Costa Rican anaerobic cinnamon co-ferment by Esteban Zamora. Zamora has been perfecting the process of nailing the delicate balance of spice and sweetness in his coffee over the last several years. After the fruit from the coffee cherries is stripped away, the remaining mucilage is left on the seeds, which are then added to a bag to be sealed in an anaerobic environment along with cinnamo
