Botanical Name - Sinapis alba Origin - Canada Flavor Profile - Spicy and pungent. Blends well with dill, celery seed, coriander, cumin and many other herbs and spices. Cosmetic Usages - Infuse in oil or alcohol to make liniments and ointments. The powdered seed is also used in moist hot packs and poultices. Culinary Usages - Add to homemade pickling spice mixtures and curry seasoning blends. Sinapis alba is botanically known as white mustard but most people refer to it as yellow mustard, if only because the seeds are used to produce the condiment of the same name. A member of the cabbage family, the species is original to the Mediterranean region but is now naturalized throughout most of the world. Most people would be surprised to learn that yellow mustard isn't yellow. The white herb powder is made yellow in the prepared condiment by the addition of turmeric. Dijon mustard is the condiment without the turmeric but with a relatively high concentration of mustard flour. Household Usage
