Tenbi Tokubetsu Junmai

A delightful, light and refreshing modernist junmai ginjo from a region usually known for its powerful umami and big juicy flavors. Notes of passionfruit, custard, caramelized pineapple, mamey, spearmint and laundry sheets! Acidity is on the high side at M+, a touch grassy when first opened but it dissipates after a few days. Finish lingers, but it doesn't rely on "bigness" to deliver this longevity...just great craftsmanship. On the finish I get that fine, Japanese wagashi sugar sweetness and a little starchiness too. Crisp and wonderful. Enjoy now, because the toji is changing-- and it may never be quite the same!
