This high mountain tea goes through a special process first used in Japan. The tea plants are partially shaded two weeks before harvesting. This builds ups the glutamic acid in the leaves. Then, the leaves are oxidized in an oxygen free environment. Instead nitrogen is used, converting the glutamic acid into Gamma-Aminobutyric Acid (Gaba). This process creates a cup of tree with a fruity aroma and rich, sweet flavor.
