'Pandorga is 100% Pedro Ximénez from a single vineyard “La Panesa” in the Pago deCarrascal, grown on Albarizas de Barajuelas facing west. The grapes are hand harvested before becoming overripe, sun-dried by the Asoleado method until they losehalf their initial volume (10 days), then pressed whole-cluster into an old 500L Jerezbota for spontaneous fermentation without temperature control, and raised in bota for12 months before being bottled with a light filtration. With only 15% of the originalharvest yielding juice for the wine , this is one of the most unusual and fascinating sweet wines we've ever had from Spain, offering notes of marmalade balanced by refreshing acidity.' - Importer's Notes
