Fernando Mora, Master of Wine, is the winemaker here for Bodegas Frontonio within the Valdejalon appellation in the larger region of Aragon in Spain. His Microcosmico Macabeo is coming from 65+year old vines and sees cement tank aging on the lees, with no battonage. High toned, textured, and filled with citrusy fruits, this is an awesome non bubbly version of a grape that is normally seen in Cava.
