'Look for flavors and aromas of blackberry, cherry, vanilla, clove, cedar, sage, and earth. Delicate tannins, pleasant acidity, and a tart medium-length finish.' - Importer's Notes 'Philippe Collette, who works with his daughter Isabelle, farms around 13-hectares of vine concentrated around the appellation Marsannay, augmented by parcels of vines in Fixin and Chambolle-Musigny. Their holdings stem from 3-hectares owned by his father that have been expanded over the years, and whilst they do not own any premier or grand crus, they do have plenty of old vine material to work with. The vines are tended lutte raisonnee and Philippe stressed that he spends most of his time out amongst the vines. Everything is picked by hand, sorted on a table de trie and fully de-stemmed. After a 7-day cold maceration the wine is fermented with twice-daily pigeage and usually bottled the following spring.' - Wine Advocate
