Tsitska Pétillant Naturel, Gvantsa’s Wine, Guria, Georgia, 2019

Vital Signs: Tsitska is part of the Imereti family of indigenous Georgian vines. It is a late ripening varietal that can often be quite spicy, richly textured and full of honey aromas. It typically gives wines with high acidity and is popular for sparkling wines as such.Ali’s Assessment: Gvantsa is an incredible young wine maker from Imereti, Georgia. She wanted to make sparkling wine but found making wine in the champagne method to be too cost prohibitive. The gents at Lapati mentioned Pét Nat as an alternative. Gvantsa had never heard of the style, but she and her brother googled how to make it. The results are these fabulous bubbles.
