Jyo Sencha: This premium grade, first flush, asamushi (light steamed) sencha is bursting with savory umami, vegetal sweetness, and a crisp finish. It hails from Uji, Japan, an area renowned for its high-quality and flavorful green teas. This sencha is unique in that it is shade grown for a short time before harvest to decrease astringency, and increase its umami flavor profile. Truly an incredible first flush sencha that we are proud to add to our collection! Tasting notes: soft umami, baby kale, hazelnut, sweet peas. Brewing GuidelinesKyusu (traditional Japanese side-handled teapot): 1 gram of leaf per oz of water. 150° water. 1st infusion 1 minute. 2nd infusion 30 seconds. 3rd infusion 1 minute. Teapot/mug: 1 tablespoon of dry leaf per 8oz of water. 160° water. 1st infusion 1½ minutes. 2nd infusion 30 seconds. 3rd infusion 1 minute.*It is important not to agitate the leaves while they are steeping, this will cause bitterness.
