Hey Papi! Genuine Puerto Rican "Pique" Sauce
Pique sauce On my restaurant menus, we called Pique sauce "Sittin' on the back of the stove" sauce because there was always a bottle of it-homemade, usually in a rum or other liquor bottle, just sitting in t he back of the stove at the ready! Pique is a ubitquitous table condiment found in Puerto Rican households. It is salty, spicy, briny yumminess! It is thin, so it is best to dribble on rice and bean dishes, chicken wings, fried foods and it is especially good on oysters! It is essential with adobo roast pork, too. Damn, I have even drizzled it into chicken soup! It has a floater of EVOO. That is where the heat will predominantly reside. Shake it up for best results!
