Wuyi, Unroasted

This tea was made by the enthusiastic tea producer who makes our Wuyi Roast, except this batch is unroasted. He inherited this lot of Wuyi tea plants from his family almost five decades ago. Older tea trees have more character and its true color shines through more when the tea is unroasted. Wuyi cultivar's aromas are branchy and hearty instead of soft and tender, giving it a real spine and presence compared to the elusive quality of Taiwanese high mountain oolong.  We think this is a mid-frequency tea that's perfect for transitional weather, especially from summer into autumn. It calms and provides necessary readiness, like a bundle of freshly sharpened pencils for the new school year. Available at the tearooms Tuesday 9/9.
