This exquisite green tea is harvested at an altitude of 4000 feet, during a very small window of oportunity, in early spring. Full of silvery tips, it has the appearance of a white tea. Because the tea grows in precariously high, steep mountains, it is said that monkeys were trained to go collect the precious leaves. That and the "bai hao" silvery/white fuz that covers it, gives it its unique name. The flavor of the tea is light, sweet, very floral, with a nutty and green finish and almost no astringency. A truly delightful tea.
