Whipped Coffee White Russian
Serving: 1Prep time: 15 minutes DATE PASTE18-20 Terra Delyssa Organic Deglet Noor Dates1 cup of the soaking water WHIPPED COFFEE TOPPING 1 tbsp hot water1 tbsp instant coffee1 tsp sugar (optional), helps achieve a fluffier consistencyCOCKTAIL2 tbsp date paste 1/2 tsp vanilla extract 1.5 oz white rum 1.5 oz Kahlúa 1.5 tbsp Terra Delyssa Robust Extra Virgin Olive Oil Ice 1/4 cup whole milk (or plant milk)INSTRUCTIONS1. To make the date paste, add dates to a bowl. Cover with hot water and soak for 10 minutes. Place dates and 1 cup of the soaking water in high speed blender and blend until smooth. 2. To make the whipped coffee topping, combine instant coffee, hot water and sugar in a bowl, and beat with an electric mixer until fluffy and light (around 3 mins).3. To make the cocktail, add date paste, vanilla, rum, Kahlúa and olive oil to a cocktail glass, and mix well. Top with ice, milk and the whipped coffee.Enjoy!
