The SR540 is an upgraded version of the older model, SR500. The improvements really make this roaster a strong contender in this price range.  In fact, it's hard to beat without spending a lot more money. Although the SR540 is more sophisticated version of the SR500, it has kept the user friendly design concept. However, with the addition of a fan speed control knob (± 10%), the ability to fine tune the temperature with 9 different settings (the SR 500 only had 3), you can really tweak your roast profiles to a very precise degree without adding too much complication to your home roasting.  For example, you can now begin your roast on a low temp, high fan speed, to warm and dry the beans while keeping them moving to avoid scorching.  Once the beans are dry and yellow, you can turn the heat up to high, lower your fan speed to let the heat
