The young couple Nathalie and Gilles Fèvre are from THAT Fèvre clan in Chablis, but theirs is a tiny operation, driven by the same principles that guide the new generation in the appellation. Yields are kept low, hand-harvesting is mandatory, the use of oak is restricted...and the wines harken back to a day in which the racy, saline and razor-sharp qualities of Chardonnay were of utmost importance in this special place.
