Urfa biber chile tastes warm, complex, chocolatey. Ground sumac berries taste citrusy, bright, a little earthy. Together, with a little allspice and cinnamon, they make a rub for chicken or ribs, or a base for chickpea & sweet potato stew, that you'll absolutely love. We highly recommend mixing a tablespoon and a half of spice with a tablespoon of vinegar and an optional teaspoon or two of dark brown sugar for killer ribs. Rub the sauce onto a rack and let marinate for a few hours to overnight. Then bake at 250 degrees for 2-3 hours before finishing on the grill. Enjoy with slaw and roast potatoes.
