The Mizudashi is a 1000ml capacity cold brew pot. Place coarsely ground coffee into the reusable filter, add cold water, and place into refrigerator to brew overnight. Brewing with cold water avoids extraction of bitter oils and acids which are present when brewed at high-temperature. Cold water also preserves flavor compounds which are generally broken down when brewed at high temperature.
