Only Child Rosemary and Ginger Walk into a Bar Milk Chocolate with Rosemary and Candied Ginger

A milk chocolate bar infused with a house-made rosemary cocoa butter (with the rosemary grown by the Only Child Chocolate) and then topped with candied ginger. The flavors play off each other with the zing of ginger cutting through the rich flavor of milk chocolate and with rosemary rounding out the two flavors with a subtle sweet herbaceous-ness. The addition of cocoa butter causes the milk chocolate to readily melt on the tongue and release the rosemary flavor. This bar was originally created for a marriage celebration and thus is a wonderful marriage of flavors. Yana, an only child, grew up in Moscow. As a tiny tot, she enjoyed tiny squares of bitter chocolate that sweetened the cold of Russian winters. Upon moving to Chicago in the summer of 1997, she discovered the joys of chocolate milk and peanut M&M's thus cementing her love for both the sophisticated flavor of dark chocolate and the exuberant cheerfulness of candy.
