The Denver Steak comes from a muscle near the shoulder blade in the Chuck Primal. It is very similar to the Flat Iron Steak, however, the Denver Steak comes from under the shoulder blade. It is one of the more tender cuts of beef and rivals a Ribeye. It is best cooked over high heat to create a sear on the outside and nice pink center. Approximately 7-8 oz.
