Tri-tip comes from the bottom portion (or the tip) of the sirloin. It is triangular in shape - hence the name Tri-Tip! It is a lean, boneless cut packed with flavor and very tender. Perfect for grilling or slow-cooking. We recommend searing on high-heat first and then slow-cooking until your desired temperature. Always let it rest prior to slicing to make sure those wonderful juices don't escape.  Approximately 2.5-3 lbs.
