The winemaker is certified organic and follows bioidynamic agricultural practices. The grapes undergo spontaneous fermentation and then aged for six to ten months in the same large oak barrels. The result is a light- to medium-bodied, easy-going red wine that shows a compelling mix of strawberry, raspberry and just a hint of smoky aromatics, along with an undercurrent of wild herbs. This is a great introduction to the fresh fruitiness of Valpolicella’s famous red wines. Pairing: Breaded & Pan-Fried Veal Cutlet
