region: Burgundy, Francegrape(s): pinot noirwinemaker: marie martinfarming: organic Husband and wife team Marie and Remi Martin run this small family estate in Chorey-les-Beaune, with Marie in charge of winemaking and Remi the vineyards. They took over for Marie’s father Daniel Largeot in 2000, and have maintained the family traditions of careful, minimal intervention farming and responsible winemaking. The Bourgogne Rouge in particular displays elegant cherry, crushed roses, and fresh herbs on the nose followed by pristine balance of bright red fruit and weight that is commonly found in much pricier premier cru reds, but frequently lacking in Bourgogne. pairing: chèvre & charlito's trufa salami with a fresh baguette
