Risot­to is an Ital­ian tech­nique for cook­ing Arbo­rio, but this rich, creamy medi­um grain is ver­sa­tile.  It also plays well in crowd-pleas­ing pud­dings and appetizers.  Kosher, vegan, gluten-free, and non-GMO.
