Sicily, Italy. 50% Grillo and 50% Insolia. Spontaneous fermentation in concrete tanks on the skins with indigenous yeast. Five to seven days of skin contact. Aged in concrete vats for eight months followed by three months in the bottle before release. Benchmark producer in the Cerasuolo di Vittorio appellation known for his Pithos wines that are aged in unlined terracotta amphora. Fermentations with natural, ambient yeast. Organic producer who has adopted some biodynamic principles.
