2023 Luddite Saboteur White Blend (Western Cape, SA) 6W

The Saboteur line is a mix of estate & purchased fruit. All purchased fruit comes from a few nearby vineyards with the same exacting standards imparted by Luddite Wines. For added texture and structure, both Chenin and Viognier underwent skin contact for 12 days, with morning and evening punch-downs. Following this, we pressed the grapes, ensuring to include as much lees and sediment as possible to enhance fermentation in barrels. A portion of Chenin Blanc underwent tank fermentation to enhance primary fruit expression. Sauvignon Blanc, on the other hand, was whole-bunch pressed and immediately transferred to barrel for fermentation without settling. All components spent 7 months in old French Oak barrels with regular batonnage.
