Paramount crystals are a candy making must-have! Paramount crystals are chips of partially hydrogenated palm kernel oil combined with lecithin (as a preservative) for the use in confectionery coating, chocolate work and yogurt coatings. When used, it keeps the chocolate fluid. Paramount crystals are used similarly to cocoa butter and shortening in chocolate work, except it has virtually no flavor (tasteless) and is odorless - and much less expensive than real cocoa butter. Perfect for a professional quality finish to all your baking and candy making, without the high-end cost! Paramount crystals work perfectly with melting wafers and candy melts, allowing for easier coating, dipping, and drizzling of chocolate. They are also a great agent for thinning fondue and chocolate fountain melts. They are easy to use; start with adding 1 to 2 tablespoons per pound of chocolate or confectionery coating until desired consistency is reached.     4 oz bag = 8 Tablespoons
