Paolo Bea's 'Pagliaro' is made from 100% Sagrantino, the fabled grape of Montefalco in Umbria. The Pagliaro vineyard is 1,300 feet above sea level, and contributes an ever-lasting acidity to the already powerful Sagrantino grape. The wine sees a 40-50 day maceration, and then is aged for 1 year in stainless steel, followed by 2 years in large oak, finally resting for one more year in bottle. The resulting wine is finally soft enough to drink, and has developed a rich and complex flavor profile. Pair it with a large cut of steak, like a Fiorentina, with smashed and fried potatoes sprinkled with sea salt, rosemary, and thyme.
