Carbonic macerated and hand harvested 100% Trousseau spends 3 weeks macerating before going to press and being aged in 160 gallon demi-muid before bottling. The grapes from this wine come from a parcel called 'En Muzart', full of broken down limestone from the Bajocien stage of the Jurassic period. It was originally planted by Stéphane's father André, and the 89 year-old man is still farming it, like the boss he is. Vinified by traditional carbonic maceration, with a 10 day cold soak, light punching down and short maceration. A pretty, floral, juicy expression of the wild Trousseau, that will be perfect with roasted duck, grilled mushrooms and lentils, or lamb burgers.
