This wine is made of 100% Timorasso, from Claudio Mariotto's youngest vines. We would pair it with a pasta dish from its more northerly neighbor in the Dolomites, called Pizzocheri. Pizzocheri is anĀ Italian buckwheat pasta combined with potatoes, cabbage and lots of gooey Valtellina Casera cheese. Derthona Timorasso is a small DOC in Piedmont, Italy, and is seeing a revival, after the Timorasso grape almost went extinct. The wines of Derthona have a wonderful combination of acidity, depth, and complexity, and has been compared to higher quality Chenin Blanc or Riesling. The wine also has a distinctly textured mouthfeel, and is fuller for white wine. The Bricco San Michele is aged on heavy lees for 1 year in stainless steel, and another 12 months in bottle. The palate is warm and fruity, and texturally finishes with sharp flinty and mineral character.
