Domaine de Pallus 'Les Pensées de Pallus' Chinon, 2016

This lovely wine is made of 100% Cabernet Franc. We would pair this with Chile-Braised Chicken Tostadas. Les Pensées de Pallus is the estate's flagship expression of Chinon, and does so with incredible precision and textural depth unlike other wines from the appellation today. An intriguing nose of dark berries and violets are followed by a conjunction of black raspberry preserves, earth, and graphite. Aged for 3 years before release. Winemaker Bertrand Sourdais employs long, gentle extractions and élevage in used Burgundian oak to make truly awesome Chinon.
